To add commands to a group, you must first add a custom group to a default tab or to a new custom tab. Only commands added to custom groups can be renamed. Default commands appear in gray text. You can’t rename them, change their icons, or change their order. In the Choose commands from list, choose the list you want to add commands from, for example, Popular Commands or All Commands.

My issue is that the ribbon is hugely important for the function of word, but it is also hugely in the way and this causes compromise of function.

Which if they hadn’t removed the ability to move the toolbars let’s be honest, the ribbon is a glorified toolbar then the problem of vertical vs horizontal real estate wouldn’t arise. You are right micrpsoft minimizing the ribbon makes it less accessible. An extra click will be required to see the microsofy commands.
